What are the must-try pastries and breads at a traditional Parisian bakery?

I recently revisited my interview with Jean-François Bandet, owner of Bo&Mie bakery in Paris, where he shared his three must-try recommendations for visitors.

His selections perfectly showcase French Parisian bakery culture: a traditional honey, hazelnut and raisin bread made with stone-ground flour and sourdough starter, a raspberry croissant that puts a modern twist on the classic French pastry, and their signature mango-passion cheesecake that changes every three weeks as part of their rotating dessert menu. After our chat, I got an exclusive behind-the-scenes tour of their laboratory where I watched pain au chocolat being prepared and baguettes being shaped by hand.

The visit concluded with a tasting session - Marilyne enjoyed the mango-passion cheesecake while I savoured their famous vanilla flan, which has already gained quite a reputation in Paris for its unforgettable taste and silky texture.
